Recipe Saturday

Wow, it's been a long time since I posted a recipe!  Yes, I know, it's been a long time since I posted anything on a regular basis.  And somehow you've all managed to survive without me!!

Anyway, I got this recipe in an email last week, and it sounded good to me.  I am always looking for quick and different chicken recipes, especially ones that don't contain "cream of something" soup and/or cheese.

Our Saturday was full of SAT tests, basketball games, and CPR training, so this seemed like a perfect day to try out this new recipe!  It was DELICIOUS!!  In fact, the boys literally fought over the last few pieces, and there was not a bite left.  I highly recommend it!

Thai Chicken with Basil

4 boneless, skinless chicken breasts, cut in chunks
1 TB canola oil
3 cloves garlic, finely chopped
2 red or green jalapeno chilies, finely chopped (I used the canned chopped green chilies.)
1 TB fish sauce or soy sauce (What the heck is fish sauce??  I used soy sauce, obviously.  Once I got the dang Kikkoman bottle open, that is!) 
1 teaspoon sugar (I forgot this!)
1/4 cup fresh basil, chopped (Would you be horrified if I admitted that I have never once in my life bought fresh basil?  The dried worked just fine!)
1 TB mint, freshly chopped
1 TB unsalted, dry-roasted peanuts, coarsely chopped
(I didn't add the mint or the peanuts.)

Spray a 12-inch skillet with cooking spray, then add oil.  Heat over medium heat.  Add chicken, garlic, and chilies to oil and cook for 8-10 minutes, stirring occasionally, until chicken is no longer pink.  Stir in soy sauce and sugar.  Sprinkle with basil, mint, and peanuts.

And that's it!  This wasn't one of those recipes that just "claims" to be quick and delicious.  It really was both of those things!  I served it over brown rice, and it was a hit!

Yum! That sounds good. It says a lot when kids are fighting over the last piece.

That sounds awesome! And I have all the ingredients on hand which is great since I'm doing "eat from the pantry" only. Can't wait to try it.

You left out the part (peanuts) that makes it enticing to me. You should have left out the garlic and peppers.
Must admit that it does sound good though.
