It was warm and beautiful here today, not really "soup weather". But I had the week's menu planned already so I made this soup anyway! It's easy and yummy, and it makes great leftovers. I think it's an old Pampered Chef recipe so I can't take any credit for it. It was good tonight--even with the windows open and the breeze blowing. We had warm bread and a fruit salad too! Enjoy!
Tortellini Soup
2 cups chicken, cooked and shredded (I usually buy a rotisserie chicken at the grocery store.)
1 cup chopped celery
1 cup chopped carrots
1 bay leaf
1/2 cup chopped onion, if desired
1-2 large cans chicken broth
1 cup dry tortellini
Combine all ingredients except tortellini and bring to a boil. Add tortellini and boil for 20 minutes.
