Recipe Wednesday

I haven' t shared a recipe lately, and I made this for dinner the other night and was reminded how yummy it is!! It's a great dish for those hot summer evenings when you don't want to turn on the oven or work too hard to feed your family. Also, this makes a BIG salad so it's great for all those picnics, camp meals, and other fun summer celebrations!

Doritos Taco Salad

1 pound ground beef, cooked and drained
1 envelope taco seasoning (follow directions on package and add to hamburger)
1 head of lettuce
2 medium tomatoes, diced
4 cups shredded sharp cheddar cheese
1, small bottle (12 ounce?) Catalina dressing (or less if you prefer)
1 bag of Doritos, regular flavor

Naturally, in my family, everyone likes different parts of this salad, so I serve it "buffet style" and just let everyone make their own salads on their plates.

If you plan to take this to a picnic or potluck, I would suggest that you assemble it when you get there so it doesn't get too soggy in transport.

This recipe is one of our favorites! I also add a can of drained, rinsed kidney beans to ours. Love your blog's new "look." Denise
